Balsamic Chicken

We tried this recipe last night for dinner.
Sorry for the messy plate, it looked fine when I took the photo :0)

The preparation for this meal was very easy, it only took 10 mins to prepare and 20 mins to cook it was a breeze.
The balsamic really gave it a tasty zing, and the boys enjoyed it.

With the veg and rice its also very healthy option.

Ingredients
• 4 skinless, boneless chicken breast halves
• ground black pepper to taste
• 1 teaspoon garlic salt
• 1 tablespoon olive oil
• 1 onion, thinly sliced
• 3 cloves of garlic, minced
• 1/4 cup balsamic vinegar
• ¼ chicken stock
• 2/3 (14.5 ounce) can diced tomatoes
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1 teaspoon dried rosemary
• 1/4 teaspoon dried thyme

How do you do it?

  • Start by seasoning the chicken breasts with the ground black pepper and garlic salt.
  • Heat olive oil in a medium skillet and brown the onion, garlic and seasoned chicken breasts.
  • Pour the tomatoes, chicken stock and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme.
  • Simmer until chicken is no longer pink make sure that the juices run clear, this took me about about 15 minutes.
  • Serve with rice and Veg.

If you don't want rice this would also work with pasta or potatoes.

  1. It certainly was, the chicken we had wasnt the best, a little dry but that wasn't the recipe's fault.
